Harvest: manual harvest 2nd decade of September

Vinification: maceration from 5 to 7 days

Fermentation: in vitrified cement tanks   – 6 mt below the ground

Ageing: stainless steel Tanks for 6 months and 3 months in bottle

Alcohol content: alc. 13,5% vol

Tasting Notes

Appearance: deep ruby tending to garnet color after short aging

Aroma: full and fruity bouquet ,delicately spiced, hints  of ripe berries and cherry jam

Taste: full and harmonius, complex with silky and elegant structure ,with a alluring and scented final

Food matches: ideal with red meats, roasts, bush meat and aged cheeses

Serving temperature: 15°C – 18°C

Storage: in a cool place, away from light and heat sources
